"Lime Biryani" Recipe

  1. Zest limes to produce 1 1/2 tsp zest, then juice.
  2. In sauce pan combine 3 tbl spoon lime juice, quinoa, water, 1 tbl spoon olive / avocado oil, curry powder, cinnamon, ginger and 1/2 tsp salt. Bring to boil, cover and simmer for 15-20 minutes or until quinoa turns transparent and liquid is absorbed. Once cooked, place in large bowl and cool.
  3. Prepare carrots, chick peas, spring onion, almonds and current/raisins and toss together.
  4. Combine remaining 3 tbl spoons lime juice, zest, olive/avocado oil, salt and pepper. Whisk until well blended.
  5. Combine all ingredients in together, then pour lime/oil mix over quinoa mixing and tossing thoroughly.
