"Low Fat Flaxseed Chocolate Chip Cookies" Recipe

Ingredients

• 18 tbsp flaxseed
• 6 tbsp brown sugar
• 2 tbsp granulated sugar
• 1 egg
• 1/4 cup fat-free buttery spray (i.e. "Olivo" or "I Can't Believe It's Not Butter")
• 3 tbsp canola oil
• 1 and 1/2 tsp vanilla extract
• 1 cup all-purpose flour
• 1 tsp cornstarch
• 1/2 tsp baking soda
• 1/4 tsp salt
• dark chocolate chips (as many as desired, roughly 1/2 cup)

Directions

• FOLLOW INSTRUCTIONS CAREFULLY :)
• Preheat oven to 350 degrees
• In a bowl, combine flour, baking soda, salt, and cornstarch; set aside
• In a separate bowl, combine flaxseed, brown sugar and granulated sugar
• Using a mixer on low speed, add egg and vanilla
• Blend in buttery spray and canola oil on low speed
• Mix in flour mixture gradually with mixer
• Add in chocolate chips
• Scoop onto greased cookie sheet (this is important as the recipe lacks butter)
• Bake for 8-10 minutes or until edges are slightly browned
• Allow 5 minutes to cool and remove from cookie sheet
• Enjoy these DELICIOUS and HEALTHY cookies with a glass of low-fat or fat-free milk!
